# Method Steps:
01 - Place walnuts and rolled oats in a food processor and pulse until finely ground and uniform in texture.
02 - Add pitted dates and finely grated carrot to the processor along with cinnamon, nutmeg, ground ginger, salt, and vanilla; process until the mixture begins to clump and forms a sticky mass.
03 - If the mixture appears dry or crumbly, add 1 to 2 teaspoons of water and pulse again until it holds together when pressed.
04 - Add shredded coconut, raisins, and chopped nuts if using; pulse briefly to distribute evenly without overprocessing.
05 - Scoop tablespoon-sized portions of the mixture and roll between your palms to form compact balls.
06 - If desired, roll each ball in additional shredded coconut to coat the exterior.
07 - Place the balls in an airtight container and refrigerate for at least 30 minutes to firm; store in the refrigerator up to 1 week or freeze up to 2 months.
